RAW PAD THAI AND SPIRALO LOVE

Pad Thai
Makes 2 – 3 servings.

3/4 cup raw almond butter
1/2 cup orange juice (freshly juiced!)
1 T minced fresh ginger
1 T nama shoyu (soy sauce)
1 T miso (optional)
1 t minced garlic
2 T honey/agave nectar
1/8 t cayenne pepper

Blend all ingredients in a food processor or blender until smooth. For a thicker sauce, add more almond butter…to thin it out, add more juice. Add more nama shoyu or sea salt to taste.

Prepare the “noodles” and then pour the sauce over them to marinate (let them sit for about 10 minutes) and then top them with a mixture of the following:

RAW OATMEAL RECIPE

Whether you are following a raw diet or simply enjoy the nutty taste of raw oats, you might be inclined to eat your oats straight from the package. Here’s an simple tasty way to increase raw food intake.

Ingredients

1 1/4 cup steel cut oats (or better yet, use oat groats)

1 1/2 cups water

1 chopped apple

1 tablespoon raisins

Methods/steps

1. The night before, throw the water, raisins and then the steel cut oats into your blender. Let them sit overnight.

2. In the morning, start your blender. While the water and oats are blending, chop the apple and then add it to the blender, too.

3. Continue blending until the oatmeal is a nice, smooth texture.

4. Enjoy!

VEGAN CHIPOTLE ASPARAGUS QUESADILLAS

Canned chipotles in adobo sauce lend mellow, smoky heat to quesadillas. Leftover chipotles (there are usually four or five in a can) can be wrapped in plastic wrap and frozen for future use.


Quesadillas

  • 1 lb. asparagus, trimmed and cut into 2-inch pieces (2 cups)

  • 1 red bell pepper, sliced (1 cup)

  • 1 medium onion, sliced (1 cup)

  • 1½ tsp. olive oil or vegetable oil

  • 1 tsp. dried oregano

  • 4 8-inch sprouted-grain tortillas


Chipotle Spread

  • 3 Tbs. vegan mayonnaise
  • 2 tsp. minced, drained chipotles in adobo sauce
  • 1 Tbs. lime or lemon juice

1. Preheat oven to 425°F.
